Change up Taco Tuesday with this easy and delicous recipe for Taco Pasta. Less than 30 minutes from start to eating. My kind of weeknight meal. Also makes really good leftovers too.
Basic ground beef for the base of this recipe then you just layer on the flavor. Onion, Taco Seasoning, salsa and cheese all over pasta. I am always looking for new ways to use ground beef becaue we get into a rut of cooking the same things. This Taco Pasta Recipe is a nice change but also extremely easy.
I make my own taco seasoning which is really easy and you can find the recipe here. I make a big batch and then keep it in a mason jar in our cupboard. You can also use a good old packet of premade taco seasoning you buy at the store. I love those.
I used shredded cheddar cheese for this Taco Pasta Recipe but I think you could use a Jack Cheese or a Mexican Blend Cheese as well. Whatever is your favorite, then use that. Life is to short not to have your favorite cheese.

¼ cup water
1 cup Salsa

In a large skillet, cook the ground beef and chopped onion together on medium heat until cooked all the way through. Add the taco seasoning and water, mix together. Cook on a low heat for a few minutes or until the water is all absorbed.
Add the cooked pasta to the skillet with the beef. Then pour the salsa over the pasta. Mix together and combine so everything is covered.
Sprinkle the shredded cheddar cheese over top and mix everything together so the cheese gets all melty.
Ready to eat! We add crushed tortilla chips and more cheese to the top sometimes and it’s delicious. Enjoy!
