Summertime in the Midwest is full of some of my favorite traditions! Lake time, ice cream, watermelon, lighting bugs, and fresh strawberries. I love to make simple recipes with fresh ingredients to add to the Midwest summer memories. These are always a huge hit and disappear quickly.
Cheesecake Filled Strawberries are a perfect mix of a fresh, juicy summer strawberry with a sweet and creamy cheesecake filling. Don’t skimp on the graham cracker crumb topping, too.
You will only need a few simple ingredients for Cheesecake Strawberries.
Fresh Strawberries
Cream Cheese
Powdered Sugar
Vanilla Extract
Graham Cracker Crumbs
This strawberry recipe is incredibly easy to make and people love them! No baking required and they come together quickly. A perfect snack for an afternoon at home or a party by the pool.
Start by cutting the green tops off each strawberry then use a spoon to scoop out the inside/white part of the strawberry.
Next, mix the cream cheese, powdered sugar, and vanilla together until smooth
Crush the graham crackers into crumbs in a small bowl and set aside.
Using a pastry bag or Ziplock with the tip cut off, spoon the cream cheese mixture in and then fill each strawberry up.
Sprinkle some graham cracker crumbs over each strawberry and set out to serve!
I have pastry bags on hand and I always like to find a reason to use them and feel like a fancy chef. I also have a bunch of disposable pastry bags that I actually use way more. I just fill them and cut off the tip, then toss when done.
No pastry bag? No biggie. Grab a Ziplock bag, fill it up with the cream cheese mixture and cut off the top. Fill the strawberries, done.

Delicious creamy cheesecake filling inside a fresh strawberry topped with graham cracker crumbs.
1 lb strawberries
1 block cream cheese (8 oz), room temperature
½ cup powdered sugar
1 teaspoon pure vanilla extract
Crushed graham crackers (about 1 sheet)
Cut green tops off strawberries and use a spoon to gently scoop the middle/white part out of the strawberry. Set strawberries aside.
In a mixer or a large bowl with a handheld mixer, add the cream cheese, powdered sugar, and vanilla. Mix until combined and smooth. Crunch up the graham cracker into crumbs.
Spoon the cream cheese mixture into a pastry bag or a Ziplock bag with the tip cut off. Fill each strawberry with the cream cheese mixture then top with the graham cracker crumbs. Continue until all strawberries are filled. Serve and enjoy!
