Holy moly, these Mint Oreo Brownies are INCREDIBLE! Soft and gooey in the middle, like a brownie should be, then a tiny bit crisp on the outer edges. So good! If you’re looking for the ultimate brownie recipe from scratch, this is it!

These came about because one night my Aunt and Uncle brought a brownie my cousin (step cousin? My family is multi-layered) Lindy had made. Lindy is a baker extraordinaire and she was not messing around with these brownies.

She found a recipe from The Picky Palate, but then (because Lindy is a genius) she made the regular Oreo Brownies into a mint brownie masterpiece: Mint Oreos and mint extract, plus lots and lots of chocolate.

I am so happy she shared these with me and now I get to share them with you! They’re not hard to make and if you don’t love mint you could swap out the mint Oreo for any other flavor, too!

These are definitely going to be made again and again in our house. Now I just have to decide what flavor of Oreo to try next…

Making Brownies From Scratch

I know that baking anything from scratch can feel a little daunting, especially if you don’t consider yourself a baker! But making brownies from scratch is seriously just as simple as making them from a box mix. And they come out tasting so much better!

Before you tackle this Mint Oreo brownie recipe, read through my tips and tricks for making the best brownies from scratch.

What makes brownies cakey vs fudgy?

The big difference between fudgy brownies vs cakey brownies is the fat content. Fudgy brownies have a higher fat-to-flour ratio and usually have lots of butter and chocolate for richness. Cakey brownies have a lower fat content and more flour, so they come out lighter and fluffier.

These gooey mint oreo brownies are definitely fudgy. So if that is your preferred style of brownie then you’re in luck!

Is butter or oil better for brownies?

Most brownie mixes call for vegetable oil. But when I’m making my brownies from scratch I prefer to use butter. Brownies made with butter just come out so rich and gooey – they can’t be beat! This recipe does actually use a small amount of vegetable oil, however. But the majority of the fat comes from butter.

What is the purpose of white sugar vs brown sugar in brownies?

This mint oreo brownie recipe calls for both white sugar and brown sugar. So why both? They play two very different roles! White sugar helps give brownies a slightly crispier texture (especially that lovely crackly top the best brownies always have). Brown sugar makes brownies more moist and dense. Together, you get the best of both worlds! I love using the combination of white and brown sugar in this recipe for an ooey-gooey brownie on the inside with a slightly crispy coating on the top.

Can you make this recipe with a boxed brownie mix?

You definitely can! While I prefer to make them from scratch, you could use this recipe to make mint oreo brownies from a mix. Simply skip over the parts about making the brownie batter and follow the recipe on the box instead. Then, use my directions for adding in the mint oreos and extra chocolate!

What You Need to Make Mint Oreo Brownies

Despite being made from scratch, you don’t need a ton of ingredients to make these addictive brownies.

All-Purpose Flour: Most brownie recipes will call for flour, but these might not have as much as you’d think. You’ll use just 1 ¼ cups of flour, helping to keep that fat-to-flour ratio low for fudgy brownies.

Unsweetened Cocoa Powder: You’ll need a full cup of cocoa powder for this brownie recipe, which will give them a super rich, deep chocolate flavor.

Kosher Salt: A small dash of salt makes these sweet brownies taste even better!

Butter: I mentioned I love making brownies with butter, right? Well this recipe calls for two whole sticks! This will give the brownies a rich flavor and also help make them super gooey.

Vegetable Oil: A small amount of vegetable oil contributes toward the overall fat content in these brownies.

Granulated Sugar: The white sugar in this recipe provides lots of sweetness and also helps give the brownies a crispy, crackly top.

Brown Sugar: Adding brown sugar into this recipe provides more sweetness, as well as a deeper flavor and a more dense brownie.

Eggs: This recipe uses 4 eggs to bring all the ingredients together.

Mint Extract: While the Mint Oreos in this recipe provide some good mint flavor, I like to add even more. Mixing in a tablespoon of mint extract kicks the chocolate-mint flavor up a notch in the best possible way!

Mint Oreos: Of course we need Mint Oreos if we’re going to make Mint Oreo brownies! You’ll end up using 12-14 oreos for these brownies, so go ahead and buy the big package so you have plenty leftover to snack on.

Chocolate Chips: Because clearly these brownies didn’t have enough chocolate in them already…I added chocolate chips! You can use your favorite variety. I like to use semi-sweet chocolate chips, but milk chocolate, dark chocolate or even white chocolate chips would taste delicious!

How to Make Mint Oreo Brownies

Step One: Preheat your oven to 350 degrees and line a 9×13 baking dish with parchment paper. I recommend leaving some hanging over the sides to make it easy to pull the brownies out once they’re done.

Step Two: Add flour, cocoa powder and salt to a large mixing bowl and stir to combine. Set aside.

Step Three: In a medium bowl, add the melted butter, oil and both sugars and whisk until well combined. Add in the eggs and mint extract next and whisk again.

Step Four: Slowly pour the wet mixture into the dry ingredients and gently stir until just combined. Add in the chocolate chips and chopped up Mint Oreo pieces (about 8 cookies worth) and fold together.

Step Five: Spoon the batter into the baking pan and spread out evenly. The batter will be thick! Break up 4-6 more Mint Oreos (or however many you want!) and sprinkle them on top of the batter.

Step Six: Bake the brownies for 25-27 minutes or until a toothpick comes out mostly clean. You’ve got melty chocolate chips in there, remember, so it won’t come out perfectly clean! Let the brownies cool for at least an hour and then enjoy!

Variations to Oreo Brownies

I really love these Mint Oreo brownies, but I also love to mix them up from time to time. Here are some of my best ideas to make this recipe your own!

Use white chocolate chips: I love mint and white chocolate together. Using white chocolate chips instead of regular chocolate chips would be so yummy in this recipe!

Add a cream cheese swirl: I love cream cheese brownies and I think these brownies would be so good with a creamy swirl added to the top!

Try a different Oreo flavor: While they wouldn’t be Mint Oreo brownies anymore, using a different type of Oreo would be delicious! I definitely want to try this recipe with Peanut Butter Oreos or their Java Chip variety. YUM!

1 1/4 cups all-purpose flour

1 cup unsweetened cocoa powder

Instructions

3. Slowly pour wet mixture into the dry ingredients and gently stir until the ingredients are just combined. Add the Mint Oreo pieces and chocolate chips and fold together. Batter will be thick, spoon into the baking pan and spread out evenly. Break other Mint Oreos into pieces and sprinkle over top of mixture.
4. Bake for 25-27 minutes, until a knife or toothpick comes out mostly clean. Remove from the oven and let cool for at least an hour. Cut into pieces and enjoy!
