These Watermelon, Cucumber and Mozzarella Bites with Balsamic Glaze are a perfect combo of flavors. A little sweetness from the watermelon, creamy and rich mozzarella plus the freshness from a cucumber, all topped with a sweet and tangy balsamic drizzle. Easy, delicious and bite size.

Ingredients for Watermelon, Cucumber, Mozzarella Bites

This simple recipe requires just a few ingredients. Farm fresh produce and creamy mozzarella.

Watermelon

End of summer means the watermelons are ripe and perfect for eating. I’m partial to a Nelson’s Produce Black Diamond, the sweet flavor is incredible and I’ve never had a bad one. It probably helps that I always ask the staff to help me pick the best one, they are the experts.

Cucumber

Cucumbers are in full force this time of year and you can grab one from Nelson’s as well. Or you can always find a neighbor with an abundance of cucumbers who is looking to share. You can peel the cucumber or leave the peel on, preference is all yours.

Mozzarella Cheese

Mozzarella might be my favorite kind of cheese. Soft, rich, creamy and goes well with so many types of flavors. Cheese is a great source of protein and vitamins, plus it’s delicious.

Balsamic Glaze

Balsamic Glaze is the thing that really takes this appetizer from incredible to amazing. A little sweet and a little tart goes well with the freshness of the watermelon and cucumber plus the creamy texture of mozzarella. I buy a premade glaze at the grocery store and it makes this recipe even more simple.

How to Make Watermelon, Cucumber, Mozzarella Bites

Step One: Cut the Produce and Mozzarella

Prep the watermelon and cucumbers. First, cut the cucumber into slices (about ½ inch thick) and then cut each slice into four equal pieces. You can peel the cucumber or leave the peel on, totally a personal preference. 

 

Cut the watermelon into bite size squares about the same size as the cucumber pieces. 

 

I like to use the mozzarella balls for this recipe, but you are can use a ball of fresh mozzarella and cut the cheese into bite size pieces as well.

Step Two: Assemble

Using a toothpick, skewer the cucumber then the watermelon piece then finally the mozzarella ball. Easy and doesn’t need to be perfect, the flavors will speak for themselves.

Step Three: Drizzle the Balsamic Glaze

Place all the assembled appetizers onto a plate and then drizzle the balsamic over top. Feel free to get generous, balsamic glaze is delicious.

And all you need to do is continue to consume dairy products and support the local farmers that provide this incredibly nutritious staple of our daily lives.

Add a layer of fresh basil. Basil is a sweet and savory flavor and goes really well with both cucumber and watermelon and definitely mozzarella, too.

Try a Honey Drizzle

Swap out the balsamic glaze for a little honey drizzle. The sweetness will  be another great combo with the watermelon, cucumber and mozzarella.

Watermelon- cut into small squares

Cucumber- Sliced and cut into ¼ pieces

Fresh Mozzarella balls or bite size pieces

Balsamic Glaze

Instructions

 

  1. Cut Cucumber into slices and then cut each slice into 4 pieces. Follow by cutting the watermelon into bite size square pieces about the same size as the cucumbers.

  2. Cut fresh mozzarella into bite size pieces or if using mozzarella balls, cut in half to match the size of the cucumber and watermelon.

  3. Assemble watermelon, cucumber and mozzarella on top of each other and stick a toothpick through the top. Continue until you have the number you would like.

  4. Finish by drizzling the balsamic glaze over top all the bites. Serve immediately and enjoy!
