I am all about nostalgia when it comes to ice cream and other summer treats. Every year when I celebrate Ice Cream Week here on the blog, I always try to create recipes that bring me (and hopefully my readers!) back to the summers of childhood. Over the years I’ve created everything from chocolate covered cookie ice cream to ice cream bon bons and brownie ice cream cake. YUM.
This year, I knew I needed to come up with even more great ice cream flavors and ice cream-related treats. And these Drumsticks are the perfect summer treat.
This simple recipe requires just four ingredients – most of which you might already have in the house!
A classic sugar cone is perfect for the Drumstick. Sweet, crunchy, and hearty enough to be filled with vanilla ice cream and covered in chocolate. You could try these with other types of cones, but I feel like the sugar cone is a classic for a reason.
Vanilla ice cream is essential for the Drumstick. And any time I want a seriously creamy summer treat, I know I need to reach for Hiland Dairy Vanilla. Hiland products are made from milk that comes from local farmers, so it’s fresh when it’s turned into ice cream. It also includes no artificial growth hormones and is rigorously tested for antibiotics, so you know you’re getting the best quality dairy. (P.S. You’ll use chocolate chips for the bottom of the cone plus more for melting and coating the ice cream. The chocolate chips at the bottom of the cone help with ice cream leaking through the cone and getting soggy. Plus, it’s a nice little treat at the end.
Coconut Oil works perfectly to mix with the melted chocolate for the topping. It helps the chocolate to harden quickly around the vanilla ice cream.
Chopped nuts are my favorite to use for topping these Drumsticks. Perfect salty to the sweet of the rest of the treat. They sell specific ice cream nut toppings that I love to use, but you can chop up your own nuts in any variety you like.
Place a few chocolate chips in the bottom of each cone. This helps the ice cream not to leak out or the cone to get soggy. Scoop the ice cream and fill the cone up. Then scoop more ice cream and place a rounded scoop on the top. Place on the cookie sheet and freeze for an hour.
In a microwave safe bowl, add the chocolate chips and coconut oil and heat 30 seconds at a time until chocolate is melted and smooth. Remove the cones from the freezer and spoon the chocolate over the ice cream. Sprinkle the nuts on the chocolate right away. Set back on the cookie sheet then into the freezer again.
After a bit of time in the freezer to set, remove and serve! Bite through the outer chocolate layer to get a taste of the chocolate, nuts, ice cream and cone. Perfect!
There are so many ways to make this Drumstick recipe your own! Let your creativity (and your taste buds) run wild and try some of these fun twists.
Chocolate is the classic Drumstick coating, but why not change it up. Try white chocolate, butterscotch, or peanut butter. Any will work! Still add the coconut oil to create that hardened outer shell over the ice cream.
Want something other than nuts? No problem, tons of other options like sprinkles, cookie crumbles, candy crumbles, pretzels. Use your imagination!

6 ice cream sugar cones
Hiland Dairy Vanilla ice cream (or any flavor)
2 cups semi-sweet chocolate chips
1 Tablespoon Coconut Oil
½ cup chopped peanuts optional
1. Line a cookie sheet with parchment paper and set aside.
2. Place a couple chocolate chips in the bottom of a sugar cone then scoop up vanilla ice cream and gently push it into the cone. Follow with another scoop of vanilla ice cream on top of the cone. Round it out.
3. Lay the filled cone on the cookie sheet. Continue with the rest of the cones and ice cream.
4. Place cookie sheet into the freezer to allow the ice cream to get solid, about an hour.
5. Before removing the cones from the freezer, pour the chocolate chips and coconut oil in a microwave safe bowl. Heat 30 seconds at a time, stirring after each time. Repeat until the chocolate is melted and smooth.
6. Remove the cookie sheet of cones from the freezer and spoon the chocolate over the ice cream on the cone until all covers. Sprinkle immediately with nuts. (or topping of choice)
7. Place the cones back onto the cookie sheet and into the freezer again to set for about 30 minutes.
8. Serve and enjoy!
To store, place the cones in a ziploc or airtight container and in the freezer.
