These three ingredient Graham Cracker Ice Cream Sandwiches are the easiest homemade summer dessert you can make! Creamy ice cream is layered between crunchy graham crackers with a drizzle of rich, melty fudge for the perfect mix of textures and flavors!

We’re HUGE ice cream fans in this family, so you can probably already guess that summer is one of our favorite months. That’s when we start making Ice Cream Cookie Sandwiches, Ice Cream Sandwich Pops, and Ice Cream Cookie Slab Bars to cool off with a sweet treat. What I love about these desserts is that they use less than five ingredients and are more about assembling than cooking. That’s exactly what you’ll get when you make these easy ice cream sandwiches with graham crackers!

This ice cream treat takes me straight back to my childhood summers. Simple, sweet, and always a little messy in the best way. I love the combo of crunchy graham crackers, creamy ice cream, and melty fudge that never gets old. You can mix it up with different ice cream flavors or even roll the edges in sprinkles for a little extra fun.

Whenever I make these, they barely last long enough to get back in the freezer because everyone wants one right away. And honestly, I don’t blame them! They’re the kind of treat that feels special but takes almost no effort. Just press, freeze, and enjoy!

Why You’ll Love This Recipe

Assembly is easy for these Graham Cracker Ice Cream Sandwiches. All you need is your favorite ice cream flavor, graham crackers and hot fudge.

Start by pressing the ice cream into a baking dish to make a square. Freeze for a bit.

Then, cut your ice cream into squares and place on top of the graham cracker square. On the other graham cracker square, spread a healthy dose of hot fudge and then place on top of the ice cream. Eat and enjoy!

Ingredients You’ll Need

  • Graham Crackers – These act as the perfect crunchy base for ice cream sandwiches, adding a hint of honey sweetness and a sturdy structure. Stick with classic honey graham crackers for that nostalgic flavor, but cinnamon or chocolate ones can add a fun twist!

  • Ice Cream – Slightly softened ice cream makes it easier to press into a pan and cut into squares. Vanilla is always a safe bet, but don’t be afraid to get creative. Cookies and cream, strawberry, or even peanut butter swirl all work amazingly well.

  • Hot Fudge – This adds a rich, chocolatey layer that ties everything together. A thick, high-quality hot fudge sauce works best since it won’t drip out too quickly when assembling the sandwiches. I highly recommend my homemade hot fudge recipe!

Step By Step Instructions

Prepare the Ice Cream Layer: Line an 8×8 baking dish with parchment paper, leaving some overhang on the sides to make it easier to lift out later. Scoop slightly softened ice cream into the pan and press it down into an even layer using a spatula or the back of a spoon. Place the dish in the freezer for at least a few hours or overnight to allow the ice cream to firm up completely.

Cut the Ice Cream Squares: Once the ice cream is fully frozen, remove it from the freezer and use the parchment paper overhang to lift it out of the pan. Place it on a flat surface or cutting board and use a sharp knife to cut it into nine equal squares. Work quickly to prevent melting, and if needed, pop the ice cream back into the freezer between cuts.

Assemble the Ice Cream Sandwiches: Lay out 9 graham cracker squares on a clean surface. Place one ice cream square on top of each graham cracker. Spread a generous amount of hot fudge onto the underside of another graham cracker square, then press it on top of the ice cream to form a sandwich.

Freeze or Serve Immediately: If you prefer a firmer texture, place the assembled ice cream sandwiches on a baking sheet and return them to the freezer for 5-10 minutes to set. Otherwise, enjoy them right away!

Expert Tips

  • Use Cold Ice Cream for Clean Cuts – Ice cream that’s too soft will be a mess to slice. Let it freeze solid after pressing it into the pan, then use a sharp knife warmed under hot water to cut through smoothly.

  • Work in Batches to Prevent Melting – If your kitchen is warm, work with just a few ice cream squares at a time, keeping the rest in the freezer. This helps everything stay firm and easy to assemble.

  • Don’t Skip the Parchment Paper – Lining the baking dish with parchment makes it easy to lift out the ice cream layer in one piece. Press it down well so it sticks to the pan and doesn’t shift around.

  • Soften the Ice Cream Just Enough – Ice cream should be soft enough to spread but not melted. Let it sit at room temperature for 5-10 minutes so it’s easy to press into the pan without dripping everywhere.

  • Use a Flat Spatula for Pressing – A spatula or the back of a spoon makes it easy to smooth out the ice cream into an even layer.

  • Let the Graham Crackers Sit for a Minute – After assembling, let the sandwiches rest for a minute before eating so the crackers slightly soften. This makes them easier to bite into while still keeping a bit of crunch.

  • Freeze Before Serving for a Firmer Texture – A quick 5-10 minute freeze after assembling helps everything set up so the ice cream doesn’t squeeze out when you take a bite. This is especially helpful on hot days.

  • Use a Serrated Knife for a Cleaner Cut – A sharp serrated knife glides through frozen ice cream more easily than a straight-edged one, creating neater squares without cracking the ice cream.

  • Assemble on a Chilled Surface – If you have a chilled cutting board or a baking sheet that fits in the freezer, use it to assemble the sandwiches. A cold surface helps keep everything from melting too quickly while you work.

Fun Flavor Combinations

  • Classic S’mores – Use chocolate graham crackers, toasted marshmallow ice cream, and a drizzle of hot fudge.

  • Cookies & Cream – Swap regular graham crackers for chocolate ones and sandwich cookies and cream ice cream inside with a layer of white chocolate sauce.

  • Salted Caramel – Pair cinnamon graham crackers with caramel swirl ice cream and a drizzle of salted caramel sauce for a sweet and salty treat.

  • Peanut Butter Chocolate – Chocolate graham crackers, peanut butter ice cream, and a spread of warm peanut butter make for a nutty combination.

  • Strawberry Shortcake – Use honey graham crackers with strawberry ice cream and a drizzle of strawberry sauce.

  • Mint Chocolate – Chocolate graham crackers with mint chip ice cream and a drizzle of hot fudge create the perfect balance of cool and chocolatey flavors.

  • Mocha Chip – Chocolate graham crackers, coffee ice cream, and a layer of rich dark chocolate sauce make a frozen dessert perfect for coffee lovers.

Freezing Instructions

To freeze and store, place them on a baking sheet lined with parchment paper and freeze for about 30 minutes until firm. Once set, wrap each sandwich individually in parchment paper or plastic wrap to prevent them from sticking together. For extra protection against freezer burn, place the wrapped sandwiches in an airtight container or freezer bag. When ready to eat, let them sit at room temperature for a minute or two to slightly soften.

FAQ

Can I make these ice cream sandwiches ahead of time?
Yes. Assemble them, freeze them on a baking sheet for about 30 minutes, then wrap each one individually in parchment paper or plastic wrap. Store in an airtight container or freezer bag for up to a week.

Why is my ice cream melting too fast when assembling?
If your kitchen is warm, work in batches, keeping some ice cream squares in the freezer while assembling a few at a time. You can also chill your graham crackers beforehand to help slow down melting.

Can I refreeze these after assembling?
Yes, but the graham crackers will soften slightly. If you prefer them crisp, eat them fresh or freeze them just long enough to firm up before serving.

How do I keep the graham crackers from breaking?
Let the ice cream sit out for a minute before pressing the sandwiches together so it’s firm but not rock-hard. A gentle hand when assembling helps prevent cracks.

Can I dip these in chocolate or add toppings?
Absolutely! After assembling, dip half of each sandwich in melted chocolate and sprinkle with nuts, crushed cookies, or sprinkles.
