Crispy on the outside, soft and fluffy on the inside, these crispy Air Fryer Potatoes are the perfect easy side dish for any meal. Tossed in a simple blend of olive oil, garlic, herbs, and parmesan, they cook up golden and delicious in just minutes using your air fryer!

Potatoes might just be the most perfect food. (hello, baked mashed potatoes, cheese potatoes, and oven baked potatoes!)They go with everything, take on any flavor you throw at them and can be crispy, creamy, or somewhere in between. These crispy potatoes in the air fryer make for one of the BEST side dishes for any meal. They can be flavored in so many different ways and the texture is always perfect. 

Seriously, if you’re not using your air fryer for potatoes yet, you’re missing out. This little appliance works magic, crisping up the outside while keeping the inside soft and fluffy. It’s faster than the oven, doesn’t heat up the whole kitchen, and gives you that perfect golden crunch without a ton of oil. I’ve made potatoes in every way possible, but air frying is hands-down my favorite.

What are the best potatoes for air frying?

Yukon Gold potatoes are the absolute best for air frying. They have a naturally buttery texture, a thin skin that crisps up beautifully, and just the right amount of starch to keep the inside soft and fluffy. If you don’t have Yukon Golds, that’s ok! Russet potatoes work great too, giving you an extra crispy bite, while red potatoes and baby potatoes hold their shape well and bring a slightly sweeter flavor. Fingerling potatoes are another fun option if you want something a little different. The options are endless!

  • Yukon Gold Potatoes – These have the perfect balance of creaminess and crispiness, making them perfect for air frying. They hold their shape well and develop that classic golden crust.

  • Olive Oil – Helps the seasoning stick and creates that crispy, golden outside. 

  • Seasoning – I used a mix of garlic powder, dried parsley, salt, and pepper which brings out the best in these potatoes, but you can use any seasonings you enjoy or whatever works with what you’re serving!

  • Parmesan Cheese – The secret to an ultra-crispy, flavor-packed potato. As it cooks, it creates little crunchy bits that make these potatoes out of this world.

How To Make Crispy Potatoes In The Air Fryer

Prep the potatoes: Wash and scrub the Yukon Gold potatoes, then pat them completely dry. Keeping the skin on adds texture and flavor. Cut them into 1-inch pieces.

Season the potatoes: Place the potato pieces in a large mixing bowl. Drizzle with olive oil and toss to coat every piece. Sprinkle in the garlic powder, dried parsley, kosher salt, black pepper, and shredded parmesan cheese. Toss well to distribute the seasoning.

Preheat the air fryer: Set your air fryer to 400°F and let it heat for a couple of minutes. Lightly spray the air fryer basket with nonstick cooking spray. Spread the seasoned potatoes out in a single layer, making sure they aren’t overcrowded. If needed, cook in batches.

Cook and shake: Air fry the potatoes at 400°F for about 10 minutes. Halfway through, shake the basket or use tongs to flip them around. All air fryers cook slightly different. If they need more time, add an extra 2–3 minutes and check again.

Serve and enjoy: Transfer the crispy potatoes to a serving dish and top with extra parmesan cheese and fresh parsley for a little extra flavor. Serve and enjoy!

  • Cut evenly for even cooking. Keeping the potato pieces roughly the same size helps them cook at the same rate. Uneven pieces can lead to some being too soft while others get overly crisp.

  • Dry the potatoes completely. Any extra moisture on the surface prevents that crispy, golden crust. After washing, pat them dry with a clean kitchen towel or paper towel before tossing them in oil.

  • Don’t skimp on the oil. A light but even coating of olive oil is what helps the potatoes get that perfect crispness. Too little, and they may turn out dry instead of golden and crunchy.

  • Shake or flip halfway through. Moving the potatoes around makes sure all sides get crispy. If left untouched, the bottom pieces can steam instead of crisping up.

  • Preheat the air fryer. Starting with a hot air fryer gives the potatoes an instant blast of heat, helping them develop that golden crust right away.

  • Avoid overcrowding the basket. Giving the potatoes some space allows the hot air to circulate properly. If needed, cook in batches so they crisp up evenly instead of steaming.

Freezing: These potatoes can be frozen, but they may lose some crispiness when reheated. Spread them out on a baking sheet and freeze until solid, then transfer to a freezer-safe bag or container for up to 3 months.

Reheating: To bring back their crispy texture, reheat the potatoes in the air fryer at 375°F for 3–5 minutes, shaking the basket halfway through. Avoid microwaving, as it can make them soft instead of crispy.

Do I need to soak the potatoes before air frying?

Soaking potatoes before air frying can remove excess starch, potentially enhancing crispiness. For this recipe, it’s not necessary as the potatoes will still turn out crispy without soaking.

 

Should I peel the potatoes before cooking?

Ingredients

1 lb Yukon Gold Potatoes, cut into 1 inch pieces

23 Tablespoons Olive Oil

1 teaspoon Garlic powder

1 teaspoon dried parsley

1/2 teaspoon kosher salt

1/2 teaspoon black pepper

1/4 cup shredded parmesan cheese

Instructions

1. Cut potatoes into 1 inch pieces, place in a medium bowl. Drizzle olive oil over the potatoes and stir up so potatoes are covered.

2. Sprinkle the garlic powder, parsley, salt, pepper, and parmesan over top. Mix again so the potatoes are coated in the seasoning mixture.

3. Preheat air fryer to 400 degrees. Spray air fryer basket with non stick spray. Transfer bowl of potatoes to the air fryer basket and spread out in an even layer.

4. Cook for about 10 minutes. Halfway through, shake the basket a bit to move the potatoes around.

5. Remove from air fryer to another dish, top with more parmesan cheese and parsley. Serve!
